FINGER LICKIN' JOLLOF SPAGHETTI

So I know I haven't done a food post in a while and you see this meal,it's my second time making it.When I made it the first time it served as an emergency dinner.Let me explain you know those times as a mummy and wife you're just trying to figure out what to cook and when you think of the perfect meal you realize you don't even have half of the ingredients needed plus there are no places around to get major stuff.I had to look around and buy what I could to make spaghetti reasonable for us to eat and after that day I've been wanting to eat it again.
The thing about cooking is there are no rules,just do it,experiment,if it goes bad subtract some things,add some and just keep coming up with new ways to cook the same thing.
Let me show you how I made this bad-ass jollof spaghetti.

INGREDIENTS
  • 2 packs of spaghetti
  • 2 tins of sardines
  • Tomatoes & Pepper
  • Onions
  • Curry & Thyme
  • Leftover beef stew
  • Maggi
  • Ground ginger & garlic
  • Salt
  • 1overripe plantain
  • Ground Cameroon pepper


I parboiled my spaghetti and when it was slightly soft I took it off the fire and drained it.


chopped tomatoes and pepper,onions,sardines(mashed) ,leftover stew and plantain.


I used the SCANPAN wok I got sometime ago and I really love how it feels when I'm cooking in it.

I let my onions fry till it started almost getting transparent


The idea of putting plantain was a last minute one.The poor thing was lying there overripe, lonely and bored so I decided to throw it in so it can be useful at least.lol!I didn't want to fry it because I was lazy but I wanted to get that sweetness from plantain in the meal.


Here all the spices had gone in and I let it fry for a bit,about 5 minutes.


Next went in my mashed sardines.At this point I just had to admire the delicious sauce my spaghetti was going to go into.At this point you can have it with rice,yam and potatoes.It will even serve as a nice sauce for beans especially because of the plantain in it,if you substitute the groundnut oil for palm oil.

 I would have loved to play with color but like I said I used what was readily available.


Then I put in my leftover stew and let it fry for about 2-3 minutes.




In went my spaghetti and then I turned and turned and stirred and stirred till it all went round.


 My plantain had disappeared because I cut it into small bits and then again it was probably too soft but I did not expect it to be visible.I just wanted that sweetness I would get from overripe plantain.I also realized my wok was small for this so I transferred it to a big pot so I could stir well.



  For some reason I always like to have an egg with meals like this.It never feels complete without an egg.Maybe it's because I'm used to asking for egg when I buy food from bukas hehe!

This was some FINGER LICKIN' DE-LI-CIOUS-NESS!My husband said he was tasting something sweet but he didn't know what it was till I told him it was plantain because so much of it had disappeared.He said he will not like to have spaghetti any other way just when I'm thinking of other ways to upgrade this meal so it will scatter his head.

  1. I'm DEF making Spaghetti this weekend! Before I even saw your post, I had seen tooo much Spaghetti on my Ig! Gosh. This loooks soooo good. Sometimes I love mine with egg as well. I know what you mean. I'm hungry!!
