Cheechee Cooks: 'Assorted' Edikaikong Soup

This is a long long overdue post because I cooked this a while ago -late last year to be precise and forgot to post ,let me be honest I couldn't get a photo of the soup in a plate.I kept on saying when i bring out the next bowl I will but the love of food won't let me till it was finished.lol!Anyway if you know or you might not i'm Igbo and i'm married to a man from Cross-River and those people can like all this veggie soups.This is one of my husband's favourites and i've done a post like this before,only difference is now I use periwinkle which my husband recently introduced me to.I love it with the shell because it just keeps you busy but for this soup I prefer it without.

INGREDIENTS
Pumpkin leaves/Ugwu
Water leaves(half the qty of the ugwu)
Beef
Kpomo
Bushmeat
Periwinkles (1 and a half cup)
Onions
Ground crayfish,Knorr cubes
Salt
Palm oil
Ground pepper
Dryfish & Stockfish
ugwu and waterleaf washed and drained

 We bought smoked bushmeat on our way back from church so I just washed with some salt.

                                                                       PROCEDURE


 So I already had my meat cooking with the kpomo and once the meat was tender and the meat gravy was almost dried I put in the bushmeat,palmoil,stockfish and dryfish.I tried to make sure the soup did not come out too watery so I left my meat on the fire for a while so I could loose a lot of the water.


 Next to go in was my knorr cubes,salt,pepper,crayfish and periwinkles.

 Once it had simmered for a little while.I poured in my ugwu which had been draining in a strainer


 Then my waterleaf went in next and I cooked for about a minute with the pot lid on.Stirred properly and then  took it off the fire and let it sit for a while.You don't want to cook your veggies for long at all.
Soup is ready!!You can see I still had the watery thing going on.I hardly ever escape it except I decide not to use my meat gravy at all which is not possible. *Spy my second pot of soup! wink

You can Serve with Eba, Fufu, Semovita, Amala, Pounded yam, Rice and even Yam.

  2. Welldone ma'am...Edikaikong is bae!...I'd advice you put the waterleaf before the pumpkin next time because the waterleaf brings out its own water...that would help you guage and make the soup less watery!

  3. This is one of my fav soups (just after afang soup). And the best part of the soup is rhe periwinkle in the shell!!!
